Auntie Ali's summertime Plum Cake

Cake
1/4 c Butter
1/4 c White sugar*
2 Eggs, separated
1.5 c Flour
1 t Baking powder
1/2 c Milk*
2 c Halved Plums (or apricots)
* A healthier alternative might be turbinado sugar & almond/rice/coconut/hemp milk

Streudel
1/2 c Brown sugar
1 T Butter
Cinnamon

Glaze
1/4 c Icing Sugar*
1 t Milk*
Vanilla
*Use an electric hand mixer to grinding regular sugar into a fine powder similar to icing sugar; Use same milk alternatives as above.


Grease a 9" square pan, or spring form pan.
Cream butter, sugar, egg yolks until fluffy.
Add flour, baking powder into egg mixture, alternatively with milk.
Beat egg whites until stiff but not dry.
Fold into the batter and pour into the pan.
Place plums on top.
Sprinkle strudel topping.
Bake at 350F for 35-40 mins.
Add glaze while still warm.
